4 lrg Eggs, beaten
1 cup Milk
1 cup Beer
4 cup All-purpose flour
2 x Teaaspoons baking powder
Vegetable oil for frying
4 x Extra-large yellow onions, sliced 1/2" thick and separated into rings

1. Mix the eggs, milk, and beer together in a bowl.

2. Mix 2 cups of the flour and 1 teaspoon of the baking powder together in each of two bowls.

3. Pour oil to a depth of 3 inches in a large heavy pot, and heat over medium heat until it is very hot (375-400).

4. Dip the onion rings into the egg mixture and then into the first bowl of flour. Redip into the egg mixture and then into the second bowl of flour.

Carefully, add the onion rings to the hot oil in small batches.

5. Cook the onion rings, turning once, until golden brown, about 3 minutes.

Using a slotted spoon or a long-handled fork, transfer the onions to paper towels to drain. Sprinkle with coarse salt to taste, and serve immediately.

Serves 8.

You can half this recipe or even 1/4 if using just one onion.
