1/2 cup chicken stock or defatted chicken broth
4 cup ripe avocado pulp
2 x ripe plum tomatoes peeled and seeded finely chopped
1 tbl garlic minced
1/4 cup red Spanish onion minced
1/2 cup heavy cream
1/4 cup mayonnaise
1 tsp Tabasco sauce
2 tbl lime juice
1/2 tsp ground cumin
salt and white pepper to taste
Instructions:
Instructions: Combine the chicken stock with the avocado pulp in the container of a food processor or blender. Process 5 to 7 seconds. Add the tomatoes, garlic, onion, heavy cream, mayonnaise, Tabasco, lime juice, cumin, and salt and pepper, processing until all the ingredients are pureed and combined well. Refrigerate for a few hours. Stir. Serve cold in chilled bowls. Garnish with lemon peel.
