Instructions: Preheat oven to 300. In a medium saucepan, bring the water to boiling. Add the rice and the 1/2 t. salt. Cook, uncovered for 5 minutes. Drain. In a 3 qt. round casserole dish, stir together the onion and melted butter or margarine till the onion is coated with butter. Bake, covered, in the 300 oven for 15 minutes. Remove the casserole from the oven. Stir in the partially cooked rice, the 1/2 t. salt and pepper. Bake covered in the 300 oven for 1 hour. Remove the casserole from the oven. Stir the whipping cream and the 2 T. butter or margarine into the rice mixture. Sprinkle with the cheese and parsley and serve immediately.
Makes 8 - 10 servings. *NOTES: To reduce calories and fat, use light cream or half & half instead of the heavy whipping cream. You can slice the onions in the food processor. Serving Ideas: This hearty dish is a great substitute for potatoes. Email this Recipe:
