1 cup strawberry jam
1/4 cup Cointreau
1 pun strawberries, washed and sliced
2 x eggs
1 tbl water
1 tbl caster sugar
15 gm butter
Instructions:
Instructions: STEP 1: Place jam and Cointreau into a medium pan, stir to combine, bring slowly to the boil and cook for 2 minutes. Stir in the strawberries and cook on a medium heat for 1 minute. Remove and set aside.

STEP 2: Seperate the eggs. Place the yolks, water and sugar in a large bowl and whisk with a fork to combine. Place eggwhites into a large, clean, glass bowl and whisk with a balloon whisk until soft peaks form.

Using a large metal spoon, fold the eggwhites gently into the egg-yolk mixture.

STEP 3: Preheat grill on high. Heat a small pan on a medium heat. Add butter and swirl the butter evenly over the base of the pan. Pour in the egg mixture and cook over a high heat for about 30 seconds or until the base of the omelette begins to brown.

STEP 4: Place the omelette under a preheated grill and cook for about 30 seconds or until the top is set. Slide the omelette onto a warm plate and fill with some of the prepared strawberry sauce. Fold the omelette in half, dust with icing sugar and serve immediately.

This recipe is enough for one omelette - make as many as you like. The strawberry sauce will be enough for four, Make the sauce first.
