1/4 cup unsalted butter -- softened
1/2 cup sugar
2 x eggs -- beaten
1 tsp lemon extract
1/2 cup sifted flour
1 tsp baking soda
1/2 tsp nutmeg
Instructions:
Instructions: Preheat oven to 375 degrees. Lightly grease cookie sheets. In a large mixing bowl, cream together the butter and sugar. Beat in the eggs. Continue beating until the batter is very light. Add the lemon extract and mix well. Sift the flour with the baking soda. Mix the nutmeg into the sour cream. Add the flour mixture to the batter, 1 cup at a time, alternating with the sour cream. Mix well. Drop by rounded teaspoonfuls onto the cookie sheets, about 2" apart.

Bake for 12-15 min. or until the cookies have browned around the edges. Remove from the oven. After the cookies have cooled for 2-3 min., but are still warm to the touch, use a spatula to transfer them to a wire rack to cool completely.
