5 cup fish stock
1 x lemon grass root finely chopped
1 sm lime thinly sliced
2 x dried kaffir lime leaves
1 x fresh red chilli seeded
8 x green king prawns in the shell
2 x cleaned squid cut into rings
2 tbl fish sauce
1 x spring onion chopped
Instructions:
Instructions: Bring fist stock to the boil and add lemon grass lime lime leaves and chilli.

Simmer for 6 to 7 minutes
Peel prawns leaving tail and last section of shell in place.

Cut along the centre back and remove the vein.

Add prawns squid and fish sauce.

Garnish soup with spring onion and coriander.

Serves 4
