Instructions: Cut the skin from the eggplant. Slice eggplant into 1/2 inch slices. Dampen the eggplant with a small amount of water and season with the Italian seasoning and the garlic.
Heat the olive oil in a skillet. Slice the red onion into thin slices and place slices in the oil. Fry until tender, then drain on paper towels. Add the eggplant to the oil, fry on both sides until browned. Drain on paper towels. Place a slice of the cheese, slices of the red onion and slices of the eggplant into the sliced sourdough roll. Add more garlic, if desired. Heat in the microwave until the cheese melts and serve. Email this Recipe:
