4 x mackerel about 455g each. gutted and cleaned
230 gm onions chopped
1 tbl soft dark brown sugar
1 x bouquet garni
4 x black peppercorns
1 tsp pickling spice
Instructions:
Instructions: Set the oven at Gas Mark 4 350 degrees F 180 degrees C. Arrange mackerel in an ovenproof dish.

Sprinkle over onions sugar bouquet garni peppercorns and spice.

Pour over the vinegar and bake for 45 minutes to 1 hour until the flesh flakes easily Carefully lift and drain mackerel.

Strain the marinade over the fish and allow to cool.

Chill and serve the fish in the marinade.
