Instructions: Preheat oven to 400 degrees. Cream butter and sugar together until light.
Add beaten egg yolks. Blend cornmeal and cream to a smooth paste. Add to sugar/butter mixture. Beat egg whites with a pinch of salt until stiff; fold whites into batter. Pour into unbaked pie shell. Bake 5 minutes at 400 degrees; reduce heat to 350 degrees and bake 55 - 60 minutes more. Allow to cool before serving. Email this Recipe:
