Olive oil flavored vegetable cooking spray
1 lrg onion shopped
1 stalk celery, chopped
3/4 cup thinly sliced leeks
3 clv garlic, minced
3 x 14.5-oz-cans whole tomatoes, undrained and chopped
1 cup dry white wine
1 cup water
1/4 cup clam juice
1/2 x 10-oz-pkg. frozen cut okra, thawed
2 tbl chopped fresh parsley
3/4 tsp dried Italian seasoning
1/2 tsp dried basil
1/4 tsp powdered saffron
1 x bay leaf
3/4 lb unpeeled medium-size fresh shrimp
3/4 lb orange roughy r other white fish fillets,
cut into 1 1/2-inch pieces
Instructions:
Instructions: Coat a Dutch oven with cooking spray; add onion, celery,leeks, and garlic. Saute 5 minutes or until vegetables are tender.

Add tomatoes and next 9 ingredients. bring to a boil over medium heat. Cover, reduce heat, and simmer 20 minutes.

Peel and devein shrimo, Add shrimp, fish and scallops to tomato mixture, stirring well; cook 5 minutes over medium-high heat or until shrimp just turn pink and fish flakes easily when tested with a fork. Remove and dizcard bay leaf.

Yield: 12 servings.
