Instructions: Coat a Dutch oven with cooking spray; add onion, celery,leeks, and garlic. Saute 5 minutes or until vegetables are tender.
Add tomatoes and next 9 ingredients. bring to a boil over medium heat. Cover, reduce heat, and simmer 20 minutes. Peel and devein shrimo, Add shrimp, fish and scallops to tomato mixture, stirring well; cook 5 minutes over medium-high heat or until shrimp just turn pink and fish flakes easily when tested with a fork.
