Ingredients:

8 oz frozen okra sliced 1/4" thick
1 whl chayote squash peeled and chopped
1 x clove garlic minced
1 tsp olive oil
1 cup tomatoes, canned drained and chopped
1/2 cup frozen corn
1/2 tsp dried thyme crushed
1/4 tsp Cajun seasoning
Instructions:
Instructions: In a large skillet cook okra, chayote, and garlic in oil for 5 minutes.

Stir in tomatoes, corn, thyme, Cajun seasoning, and hot sauce. Cook and stir for 5 minutes more or until vegetables are tender.

NOTES : Original recipe called for 1/4 teaspoon of black pepper which I substitute with Cajun seasoning.
