1 lb fresh salmon fillet, no less than 1 inch thick, skin and bones
removed
2 tsp chili powder
1 tsp ground cumin
Kosher or sea salt to taste
Freshly ground black pepper
2 tbl olive oil
Mango salsa (which see)
Instructions:
Instructions: 1. Preheat oven to 400 degrees. In a small bowl, mix chili powder, cumin, salt and pepper. Spread on waxed paper and dredge the fillet on the non-smooth side (the side that didnt have the skin).

2. Select a large saute pan that is oven-safe. In this pan, heat the olive oil over high heat until it just begins to smoke. Cook the salmon, spiced side down for about 30 seconds, until crust forms.

3. Turn salmon, spice side up and place in the oven for 5-7 minutes, taking care not to overcook - it should still look slightly translucent. Cut the filet into serving portions, and garnish with mango salsa and cilantro sprigs.
