2 tbl vegetable oil
2 lb lean ground beef
3/4 cup chopped onions
1 x Clove garlic
1 can mild or hot chili salsa (8 oz.)
1/3 cup sliced black olives
1/2 tsp dried oregano leaves
1/4 tsp ground cumin
1/4 tsp salt
1/4 tsp pepper
2 pkt corn muffin mix (8 1/2 oz.)
2 x eggs
2/3 cup milk
2 tsp chili powder (2 to 3)
Instructions:
Instructions: Cook in an electric frying pan. Heat fry pan at 300 degrees. Add oil, beef, onion and garlic; cook until beef is browned, stirring occasionally.

Drain excess fat. Stir in salsa, olives, oregano, cumin, salt and pepper; cook, covered, at 200 degrees for 5 minutes.

Make corn muffin mix according to package directions, using eggs, milk and chili powder, fold in cheese. Spoon batter over beef mixture in fry pan; cook at 225 degrees, with cover ajar 1 inch, until batter is cooked through, about 20 to 25 minutes.

Serves 8.
