Instructions: Heat a medium-size nonstick skillet on medium high. Cut the breasts into two
(6-ounce) portions and flatten the chicken with the bottom of a heavy skillet or the palm of your hand to about - 1/2 inch thick. Spray the skillet with vegetable oil spray and add chicken. Brown 2 minutes; turn and brown 2 more minutes. Salt and pepper top side. Lower the heat to medium low and spoon the salsa over each chicken portion. Cover with a lid and cook 5 minutes.
