1 tbl canola oil
1 lrg yellow onion, diced
1 x yellow or red bell pepper, seeded and diced
1 med zucchini, diced
2 x cloves garlic, minced
2 cup fresh or frozen corn kernels
15 oz canned white kidney beans, (cannellini)
OR navy beans, drained
15 oz canned stewed tomatoes
15 oz canned crushed tomatoes
2 tbl dried parsley
2 tsp dried oregano
2 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
1/2 tsp ground black pepper

Instructions: MAKES 6 SERVINGS. VEGAN

This festive Southwestern-inspired chili is redolent with cumin, cilantro and herbs.

Heat oil in large saucepan. Add onion, bell pepper, zucchini and garlic. Cook over medium heat until vegetables are tender, stirring occasionally, to 10 minutes. Stir in corn, beans, stewed and crushed tomatoes, and dried seasonings; bring to simmer. Cook uncovered over low heat, stirring occasionally, about 20 minutes.

Remove chili from heat; stir in Cilantro. Let stand 8 to 10 minutes before serving. Serve with a sprinkle of shredded low-fat Monterey Jack cheese and flour tortillas if desired.

Makes 6 servings.
