Instructions: Spray heavy skillet with cooking spray. Place over medium heat and saute vegetables until tender. Combine salsa and egg whites. Pour into skillet; cook until partially set. Do not attempt to blend mixture.
Sprinkle with cheese. Place skillet under broiler and cook several minutes until cheese is melted and eggs are set. Serve from the pan with extra salsa or diced peppers.
