Instructions: Place the squash in a saucepan with water to cover. Cook over high heat until tender; drain well.
Combine with the sour cream, butter, cheese, salt, eggs, chives, bacon, green chiles, cilantro and crackers in a bowl, mixing well. Spread evenly in a buttered baking dish. Sprinkle with paprika. Bake at 350 degrees for 30 minutes or until browned. Note: An old roommate of mine, Kay Kelly Rains, sent me this recipe several years ago and it has been a family favorite ever since.
