Vegetable cooking spray
1 lb turkey light/dark meat, no skin, R-T-C 1/4 inch thick cut into 2-1/2- x
1/4 tsp chili powder
1/4 tsp ground cumin
1 tsp vegetable oil
1/4 cup green bell pepper in strips
1 cup onion thinly sliced separated into rings
1 cup frozen whole kernel corn
Instructions:
Instructions: Coat a large nonstick skillet with cooking spray, and place over high heat until hot. Add turkey; stir-fry 3 minutes. Stir in chili powder and cumin.

Remove turkey from skillet; set aside.

Add oil to skillet, and heat over medium-high heat. Add bell pepper and onion; stir-fry 3 minutes.

Return turkey to skillet, and stir in corn and salsa. Stir-fry 2 minutes or until thoroughly heated.

Yield: 4 servings (serving size: 1 cup).
