Ingredients:
Amount Ingredient
2 cup rotini, or other such pasta cooked and drained cooled a bit (while fixing rest)
4 oz chicken breast cooked and chopped I use 3 or 4 boneless breasts
1/2 cup celery chopped
1 cup tomato chopped more or less is fine
1/2 cup green onions, chopped
1/3 cup mayo (I use light)
1/3 cup rice wine or balsamic vinegar
1 tsp lemon juice
2 tsp chili seasoning powder
1/8 tsp cumin powder (more if you like it)

Instructions: Combine 1st five ingredients and set aside. Whisk rest and toss with salad mixture...

NOTES : We eat a lot of salads in the summer because it is so hot here in the desert. I usually have a main course salad with a couple vegetable, rice, bean or sweet salad to go along. Work is done early in the morning and no fuss and no heating up the kitchen for dinner...
