1 x clove garlic minced (1 to 2) (I use 2)
chopped onions
canned low-sodium chicken broth
canned peeled
----------------- diced tomatoes ----------------
with or without seasonings
chopped celery
chopped carrots
whole-kernel corn fresh - frozen or canned
Instructions:
Instructions: Saute the garlic and onion in a small amount of oil (I tried using a nonstick
spray, but the garlic burned) in a large saucepan or pot. When onion is tender, add remaining ingredients. Heat through. The Alamo Restaurant serves their soup with a decorative (and tasty) variety of colored tortilla
chips (blue, red, yellow).

Notes: To make this totally fat-free, you could probably saute the onion and garlic in broth, but I havent tried that. On nights when I make only soup and a salad, I sometimes add leftover rice to this concoction.
