Instructions: Saute the garlic and onion in a small amount of oil (I tried using a nonstick
spray, but the garlic burned) in a large saucepan or pot. When onion is tender, add remaining ingredients. Heat through. The Alamo Restaurant serves their soup with a decorative (and tasty) variety of colored tortilla chips (blue, red, yellow). Notes: To make this totally fat-free, you could probably saute the onion and garlic in broth, but I havent tried that. On nights when I make only soup and a salad, I sometimes add leftover rice to this concoction. Email this Recipe:
