Instructions: 1. Mince garlic and ginger root; then combine with remaining ingredients.
2. Rub mixture over spareribs. Let stand 1 hour; then roast. VARIATIONS: 1. For the regular soy sauce, substitute 5 tablespoons light soy sauce and 1-1/2 teaspoons heavy soy sauce. 2. Omit the ginger root. Substitute a second garlic clove. Add 2 tablespoons sherry and 1/2 teaspoon each of ground cinnamon, anise and cloves. Omit the pepper. 3.
