Instructions: 1. Cut tofu cake into 8 slices. Gently press tofu slices between paper towels until barely moist. Combine breadcrumbs, salt and pepper in a shallow dish; stir well. Dip tofu slice in egg white, and dredge in breadcrumb mixture.
2. Heat olive oil in a large nonstick skillet over medium heat. Add tofu slices, and cook 3 minutes on each side or until browned. 3. Place lettuce leaves on bottom halves of buns; top with tofu slices, tomato, onion and top halves of buns. Serve immediately. Serving Ideas : fat free mayonnaise, ketchup, mustard and pickle relish.
