Falafel are the hot dogs of the Middle East. Stuffed into pita bread, Soyfalafel is street food, something to eat on the go. When made the traditional way with cooked garbanzo beans, preparation is a long process. Our version, using tofu, is much faster, equally delectable, and lighter and higher in protein. In a large bowl, mix together all the ingredients. Form into 1-inch balls and bake at 350F on an oiled baking sheet for about 30 minutes. The balls should be golden and a little crusty on the outside, but still moist inside. Serve with Tahini-Garlic Dressing (p. 59). Soyfalafels make excellent appetizers and are also delicious stuffed into toasted pita bread with shredded lettuce, chopped tomatoes, cucumbers, and dressing. Yield: 36 small balls Email this Recipe:
