Instructions: In a small skillet, cook bacon over medium-high heat until browned. Remove with slotted spoon; drain on paper towels.
Cook spaghetti following package directions. Meanwhile, place peas in a colander. Drain spaghetti over peas; keep warm. In a small bowl, lightly beat eggs with 1/3 cup of the cheese, oil, salt, and pepper. Return hot spaghetti and peas to cooking pot. Pour on egg mixture, cooked bacon, and the remaining 1/3 cup of the Parmesan cheese; toss until well combined. Serve immediately, garnished with parsley, if desired. This recipe yields 4 servings. Comments: This recipe sounds sophisticated, but its really a simple combination of eggs, bacon and pasta. The hot spaghetti instantly cooks the eggs, so you can have the dish on the table in minutes.
