4 slc bacon cut small pieces
1 lb spaghetti
1 cup frozen peas thawed
2 x eggs
2/3 cup grated Parmesan cheese
2 tbl olive oil
1/4 tsp salt
1/4 tsp freshly-ground black pepper
Instructions:
Instructions: In a small skillet, cook bacon over medium-high heat until browned. Remove with slotted spoon; drain on paper towels.

Cook spaghetti following package directions. Meanwhile, place peas in a colander. Drain spaghetti over peas; keep warm.

In a small bowl, lightly beat eggs with 1/3 cup of the cheese, oil, salt, and pepper. Return hot spaghetti and peas to cooking pot.

Pour on egg mixture, cooked bacon, and the remaining 1/3 cup of the Parmesan cheese; toss until well combined. Serve immediately, garnished with parsley, if desired.

This recipe yields 4 servings.

Comments:
This recipe sounds sophisticated, but its really a simple combination of eggs, bacon and pasta. The hot spaghetti instantly cooks the eggs, so you can have the dish on the table in minutes. Diced, cooked ham can stand in for the bacon.
