4 tbl vegetable oil divided
1 can mushroom slices - (4 oz) drained
(or mushroom stems and pieces)
1 med onion chopped
1 cup uncooked spaghetti - (abt 4 oz) broken 3" pieces
1/2 cup uncooked long- or whole-grain rice
2 can ready-to-use chicken broth - (14 1/2 oz ea
1/4 tsp salt
Instructions:
Instructions: In a large skillet, heat 3 tablespoons oil over medium-high heat. Add mushrooms and onions and saute until lightly browned; remove from the skillet and set aside. Heat the remaining 1 tablespoon oil in the skillet and brown spaghetti over medium-low heat. (Be careful - it browns quickly.)

Remove the skillet from the heat and return mushrooms and onions to the skillet. Add the remaining ingredients, mixing well. Bring to a boil, reduce heat to low, cover, and simmer for 20 minutes, or until all the liquid is absorbed.

This recipe yields 6 servings.

Comments: This is a great make-ahead dish, because it freezes well.
