Instructions: Spray a large pot (dutch oven) with cooking spray and sautee vegetables until tender.
Add spices and tomatoes (chopped up somewhat) and tomato paste. Simmer until done (I just leave it on the stove for a couple of hours to allow the spices to blend). Serve over cooked pasta (al dente). Top with freshly grated parmesan cheese if you dont mind the extra fat. Email this Recipe:
