Instructions: Several tablespoons of very good quality olive oil
(Use the kind flavored for dipping or extra-virgin) In a nonstick skillet heat olive oil and start to brown the garlic. When the garlic is a pale golden add the basil. Saute for about 2 minutes before adding the spaghetti squash strands. If there isnt enough olive oil to thoroughly coat the strands, add more. Reduce heat and continue to saute until garlic is brown, about 5 minutes. Add the Parmesan and serve while hot. This is great with a thick, crusty bread. To Cook the Squash: The spaghetti squash should be cut in half lengthwise (using caution since this can be difficult) and the seeds removed. The easiest way to cook the squash is in the microwave. Place cut side down in microwavable pan. Fill with just enough water to come an 1/8th of an inch up the squash, usually 1/4th cup of water. Cover with plastic wrap and microwave for 10 minutes on high, or until strands pull away from shell. Remove all of the strands to a bowl to be used in recipe. Email this Recipe:
