Instructions: Preheat oven to 400 degrees. Heat the 4 tablespoons olive oil in a large saute pan over high heat and add the onion, chile flakes, scallion, dill, oregano, mace, garlic, and salt. Sauti until aromatic and glassy. Add the spinach and cook until wilted. Pour contents of pan into a sheet tray and cool quickly by placing it in the refrigerator for about 15 minutes. Then combine the spinach mixture with the eggs and cheeses. Brush 8 filo sheets with some of the remaining olive oil and place in the bottom of a greased 14 x 10 pan. Spoon and spread the spinach mixture into the pan and top with another set of 8 sheets brushed with olive oil. Tuck the edges of the top sheets inside then fold the edges of the outside sheets over towards the center of the pan to form a crust. Brush the top of the pastry with oil. Place pie in the oven and turn down to 350 degrees. Bake for 45 minutes until golden and hot. Let rest for 10 minutes before slicing in triangles and serving.
