Instructions: Dice onions, capsicum, tomatoes and ham.
Heat oil in a fry pan and saute garlic, onion, capsicum and ham until soft. Add tomatoes and herbs, season and set aside to cool. Beat eggs together and add onion/tomato mixture. Mix well. Melt the butter in a non-stick frypan and when bubbling, pour in egg mixture and cook over low heat for 2-3 minutes, stirring, until mixture just begins to set. Place pan under grill to just set the top without browning. Cut into wedges and serve with fresh tomato sauce and salad. Email this Recipe:
