2 lb beef or calves liver
4 slc bacon cut in half
1/2 cup chopped carrot
1/2 cup chopped celery
1 sm onion sliced
1 can stewed tomatoes - (16 oz)
1 tsp salt
1/8 tsp freshly-ground black pepper or more to taste
Instructions:
Instructions: Place liver in slow-cooking pot. Arrange bacon on top. Mix the remaining ingredients and pour over liver. Cover and cook on LOW 6 to 8 hours. Remove bay leaf.

This recipe yields 5 to 6 servings.
