Instructions: * Note 1: Have your butcher run the ribs through his bandsaw.

Place the sparerib pieces in a colander and pour two quarts of boiling water over them. Do this in the sink. Drain them well and stir-fry or pan-fry until lightly browned. Drain the fat and place them in a bowl. Add all other ingredients except the onions and green pepper. Mix well, then add the onions and pepper. Place in a steaming dish and steam for 1 hour 15 minutes. They will be very tender and delicious. This dish, popular even at formal Chinese dinners, must be chewed on and the flavor is wonderful.
