1 pkt Jell-O Brand Gelatin or
Sugar Free Gelatin Cherry Flavor (8-servings)
2 cup reduced-calorie cranberry juice cocktail boiling
1/2 cup cold club soda
1/4 cup creme de cassis liqueur (optional)
1 tsp lemon juice
1 cup blueberries
1 cup raspberries
Instructions:
Instructions: Dissolve gelatin completely in cranberry juice. Stir in club soda, liqueur and lemon juice. Refrigerate until slightly thickened.

Stir in 2 cups of the berries. Spoon into 6-cup mold which has been sprayed with no stick cooking spray or a bowl. Refrigerate 4 hours or until firm.

Unmold. Garnish with remaining 1 cup berries.

This recipe yields 8 servings.

Comments: This salad is not only low calorie, its naturally fat free, low in sodium and an excellent source of Vitamin C.
