1/2 lb Thinly sliced speck, see note or prosciutto
2 x Ripe, juicy tomatoes
4 oz Ball whole-milk mozzarella
6 x Pitted green olives, quartered
8 x Fresh basil leaves, shredded, up to 10
Salt, to taste
1/4 cup Extra-virgin olive oil
Instructions:
Instructions: 1. Arrange the slices of speck on serving dishes.

2. In a small bowl combine the tomatoes, mozzarella, olives, and basil.

Season lightly with salt. Add the olive oil and mix everything well. Spoon this mixture loosely over the speck, season with a few grindings of pepper, and serve.

NOTE: Speck is a smoked ham that is a specialty of the Trentino-Alto Adige region in northeastern Italy. It is available at many Italian markets or specialty food shops.
