Chick-Pea Spread (see below)
4 x flour tortillas - (6" dia)
1/2 cup shredded carrot
1/2 cup shredded red cabbage
1/2 cup shredded reduced-fat Cheddar cheese (2 oz)
4 x red leaf lettuce leaves
----------------- CHICK-PEA SPREAD ----------------
1 can chick-peas - (15 oz) drained, rinsed
1/4 cup nonfat cream cheese
1 tbl finely-chopped onion
1 tbl chopped fresh cilantro
2 tsp lemon juice
2 x garlic cloves
1/2 tsp sesame oil
Instructions:
Instructions: Prepare Chick-Pea Spread. Combine chick-peas, cream cheese, onion, cilantro, lemon juice, garlic, sesame oil and pepper; process until smooth. (

Makes about 1 cup)

Spread each tortilla with 1/4 cup Chick-Pea Spread to about 1/2 inch from edge. Sprinkle evenly with 2 tablespoons each carrot, cabbage and cheese. Top with 1 lettuce leaf.

Roll up tortillas jelly-roll fashion. Seal with additional Chick-Pea Spread.

Serve immediately or wrap tightly with plastic wrap and refrigerate up to 4 hours.

This recipe yields 4 servings.

Comments: These colorful low-fat sandwich roll-ups are packed with dietary fiber. Wrap and take them to the office or cut them into pinwheels for appetizers.
