Instructions: Peel and core apples, Slice into 1/4-inch-thick rings and arrange in a 9 1/2-inch glass pie plate. Drizzle orange juice evenly over top. Mix orange peel, cinnamon and sugar in a small bowl; sprinkle over apple slices. Cover loosely with waxed paper. Microwave on High 2 minutes. Rotate dish and microwave 1 to 2 minutes more, until apples are tender. Top with crushed gingersnaps and serve immediately.
