Ingredients:

2 tbl oil
225 gm fillet steak cut into thin strips
1/10 lt beef stock
2 tbl thai fish sauce
15 gm dried porcini or shiitake mushrooms broken into pieces and soaked in 150ml boiling water for 15 minutes
1 lrg red chilli deseeded and finely chopped
1 stk lemon grass trimmed and thinly sliced
25 x mm piece root ginger peeled and finely chopped
6 x spring onions halved lengthways and cut into 25mm lengths
1 clv garlic crushed
1/4 x level tsp caster sugar
50 gm medium egg noodles
125 gm spinach leaves roughly chopped
Instructions:
Instructions: Heat the oil in a large saucepan on the boiling plate brown the meat in two batches and set aside.

Pour the stock into the pan with the thaifish sauce mushrooms and their soaking liquor chilli lemon grass ginger spring onions garlic and sugar.

Bring to the boil.

Break the noodles up slightly and add to the pan then stir gently until they begin to separate.

Cook in the simmering oven for 4 to 5 minutes or until the noodles are just tender.

Stir in the spinach coriander and steak and bring to the boil.

Adjust the seasoning adding a little more thaifish sauce if necessary.

Serve in warmed bowls.

This hearty soup takes its influence from fragrant asian flavours. If you cannot find lemon gross add grated lemon rind and juice to taste.
