Ingredients:
Amount Ingredient
1 tsp lemongrass ginger oil (Stonewalls Kitchen)
(see tips)
1/4 sm red onion diced
1 sm apple cored and diced
10 oz slaw mix (cabbage and carrots)
1/8 tsp old Bay Seafood seasoning
salt and black pepper
1 pch ground allspice
1 pch ground clove
1 pch red pepper flakes
1 pch ground cinnamon
----------------- TO TASTE: ----------------
3 tbl balsamic vinegar
Instructions:
Instructions: Rinse the chopped shredded cabbage and carrots and set to drain in a colander. Warm oil in a large, nonstick skillet or stir fry pan over medium heat Add onion and saute 1 minute. Add the apples and saute until the onion is soft and the apples are golden (about 4 minutes). Add remaining ingredients except vinegar and sugar. Stir to combine and saute until the cabbage is crisp tender - about 4 to 5 minutes. Remove from the heat. Add the vinegar and brown sugar; toss. Adjust seasoning to taste. Let stand 10 to 15 minutes so that it cools to room temperature before serving.

TIP - Substitute a mild oil like canola or light olive oil. Boost the flavor: add a pinch of lemon zest and grated fresh ginger.

Description: "Serve as a relish on a sandwich"

NOTES : Salad, salsa, and relish offer easy and tasty ways to add fiber to a meal. We served this slaw with a fish taco instead of the dairy-rich KFC version. So simple: season to taste. Wonderful contrast with the sweet cod.
