Instructions: Bring several quarts of water to a boil in a large pot. Add the whole carrots and simmer until they are tender but not soft, about 12 minutes.
Drain the carrots and cool slightly. While the carrots are cooling, whisk the oil, lime juice, spices, and salt together in a medium bowl. Cut the carrots into 1/4-inch pieces and add them to the bowl with the dressing. Stir in the parsley. Email this Recipe:
