Instructions: Rinse the mushrooms, then cover with 3 cups water and let them soak for 1 hour, or until soft. Shred the mushroom caps to thin slices; discard the stems. Reserve the mushroom liquid, adding more water if necessary to make 3 cups.
Bring the liquid and bean paste to a boil in a pan and simmer over low heat, covered for 10 minutes. Add the mushrooms, garlic and scallions. Bring to a boil again and simmer for 5 minutes. Serve warm with rice This recipe yields 4 servings. Email this Recipe:
