1/10 kg oranges
750 ml white wine vinegar
1 x 1kg granulated sugar
1/2 x cinnamon stick

Instructions: Slice the whole oranges thinly place in a large pan with lust enough water to cover. Bring to the boil and simmer for 5 minutes then drain in a colander and set aside.

Add remaining ingredients to the pan and bring to the boil stirring occasionally. Return oranges; return to the boil cover and transfer to the simmering ovenfor 50 minutes.

Lift the oranges out of the syrup and place in sterilized vinegar proof jars.

Boil remaining syrup uncovered on the floor of the roasting ovenfor 25 to 30 minutes until reduced to 1.1 litres.

Pour over the oranges cover and leave in a cool dark place for at least two weeks.

Choose smaller thin skinned oranges (ruby or blood oranges are very good). Recycled coffee jars with plastic lids are ideal (some metal lids rust easily). Spiced oranges make a lovely present for dinner party hosts or as christmas gifts. reducing the syrup in the aga ensures that the smell of the vinegar does not permeate the house.

These delicious oranges are also excellent served with cold turkey and with duck or pork pate. So make more than you need for just one meal
