1/2 kg quinces
175 gm brown sugar
600 ml cider vinegar
juice and rind of 2 lemons
50 gm root ginger
2 x cinammon sticks
2 x vanilla pods/beans
1 tsp cloves
Instructions:
Instructions: Slice the quinces in half and core them

Melt the sugar in the vinegar and add the rest of the ingredients Add tile quinces and simmer for 30 minutes Cool and bottle
Serve with onions reblochon cheese and a salad.

You may lind qubices hard to get hold of but it is worth the effort Spiced quinces taste as good as they look and are edible after one month
