Put all ingredients in a screw topped jar and shake well to blend before using. Place the rice in a pan of boiling salted water and simmer for 12-15 minutes until tender. Rinse thoroughly, drain and leave to cool slightly. Dice apricots, dates, celery. Lightly toast almonds. Place the warm rice in a salad bowl with the remaining ingredients and mix well.
