Amount Ingredient
8 cup Carrot Consomme (see recipe)
1/2 lb orzo or pasta stars
1 lb cooked peeled tiny shrimp
2 tbl grated fresh ginger
1 cup finely-diced carrots
1/2 cup grated fresh fennel
Kosher salt to taste
Freshly-ground black pepper to taste
2 tbl minced scallions
Instructions:
Instructions: Bring the consomme to a boil in a large pot. Add the orzo, reduce the heat to medium, and cook for 7 minutes. Add the shrimp, ginger, and carrots and cook for 2 minutes more. Add the fennel and cook for 1 minute. Season with salt and pepper.

Ladle into bowls, garnish with minced scallions and parsley, and serve immediately.

This recipe yields 4 main course servings.
