Instructions: Preheat oven to 400 degress. Lightly coat a large baking sheet with nonstick cooking spray.
Slice each sweet potato into 12 wedges. In a large bowl, lightly beat egg whites. In a small bowl, combine salt, ginger, and allspice. Working in batches, toss potatoes in the egg whites and arrange in a single layer on the baking sheet. Sprinkle half of the spices over the wedges. Bake 20 minutes. Turn wedges, sprinkle them with remaining spices and bake 15 to 20 more minutes, or until browned. This recipe yields 4 servings. Comments: The secret to making crisp oven-cooked potatoes is to spread the wedges out on a large baking sheet in a single layer.
