Ingredients:
Amount Ingredient
1/2 cup Plain yogurt
1/4 cup Safflower oil
2 x Cloves garlic, minced
2 x Tomatoes, peeled, seeded and finely chopped
1 x Onion, minced
2 tbl Chopped fresh coriander or parsley
1 tbl Finely chopped fresh gingerroot
2 tsp (approx) curry powder
Instructions:
Instructions: Combine all ingredients, adding more curry powder, if desired; mix well.

Makes 2 cups. This East Indian marinade is great for lamb roasts, kabob, stews, chicken and pork.
