4 x skinless boneless chicken breast 4-ounces each
cooking spray
1/4 cup apple butter
1/4 cup spicy brown mustard
1/4 tsp salt
1/4 tsp ground red pepper
1/8 tsp black pepper
2 tbl chopped green onion tops
fresh oregano optional
----------------- gorgonzola cheese grits ----------------
1/2 oz fat-free chicken broth
3/4 cup uncooked quick-cooking grits
1 cup crumbled gorgonzola cheese 4 ounces
1/3 cup fat-free sour cream
1/4 tsp ground nutmeg
Instructions:
Instructions: 1. Preheat oven to 350 F.

2. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; flatten to 1/2-inch thickness using a meat mallet or rolling pin. Place chicken in a baking pan coated with cooking spray.

3. Combine apple butter, mustard, salt, red pepper, and black pepper; brush over chicken. Bake at 350 oF for 20 minutes. Cut chicken into 1/2-inch-thick slices.

4. Spoon Gorgonzola Cheese Grits into each of 4 shallow serving bowls. Top with chicken; sprinkle with green onions. Garnish with oregano, if desired.

Yield: 4 servings (serving size: 1 cup grits, 3 ounces chicken, and 1 1/2 teaspoons green onions).

Gorgonzola Cheese Grits:

1. Bring broth to a boil in a medium saucepan; gradually add grits, stirring constantly. Reduce heat to low; simmer, covered, 5 minutes or until thick, stirring occasionally. Remove from heat; stir in remaining ingredients.

Yield: 4 cups.
