2. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; flatten to 1/2-inch thickness using a meat mallet or rolling pin. Place chicken in a baking pan coated with cooking spray. 3. Combine apple butter, mustard, salt, red pepper, and black pepper; brush over chicken. Bake at 350 oF for 20 minutes. Cut chicken into 1/2-inch-thick slices. 4. Spoon Gorgonzola Cheese Grits into each of 4 shallow serving bowls. Top with chicken; sprinkle with green onions. Garnish with oregano, if desired. Yield: 4 servings (serving size: 1 cup grits, 3 ounces chicken, and 1 1/2 teaspoons green onions). Gorgonzola Cheese Grits: 1. Bring broth to a boil in a medium saucepan; gradually add grits, stirring constantly. Reduce heat to low; simmer, covered, 5 minutes or until thick, stirring occasionally.
