1/2 lb beets, tops removed
1 tbl red wine vinegar
1 tbl balsamic vinegar
2 tsp honey
1 tbl prepared horseradish
(or 1 1/2 teaspoons freshly grated)

Use the leftover beet tops from this recipe for Apply Red Cabbage and Greens.

1. Place whole unpeeled beets in a large pot of water. Bring to a boil and cook until tender, about 40 minutes, depending on the size of the beets. Drain beets, run under cold water, and slip off skins. Trim ends and slice into whatever shape you desire. Place beets in a large bowl.

2. In a small bowl, whisk together vinegars, honey, horseradish, and salt and pepper to taste. Pour over beets and toss to coat. Serve warm or at room temperature.

Makes 6 servings. Vegan
