6 tbl cooking oil
2 tbl annatto seeds
2 lb top round beef cut large cubes
1 lrg onion finely chopped
5 x garlic cloves finely chopped
1 tbl salt
2 tbl sugar
1 tbl curry powder
1 cup beer (optional)
1 stalk lemongrass bruised
2 x pieces star anise
1 x cinnamon stick
1 cup thickly-chopped carrots
----------------- GARNISH ----------------
1 cup mint leaves
2 x red chilies sliced
Instructions:
Instructions: Heat half of the oil with annatto seeds and stir quickly until the oil takes on the redish-brown color of the seeds. Set aside, strain and remove the seeds.

Marinate the beef cubes with onion, half the garlic, salt, sugar and half of the annatto seed oil mixture for 45 minutes.

Heat the remaining annatto seed oil and cook the remaining garlic until soft. Add curry powder, beer and marinade. Braise the beef, adding a little water, lemongrass, star anise and cinnamon.

Before the meat is tender, add carrots. Simmer 3 to 5 minutes or until done. Serve with garnish.
