This recipe yields 2 1/2 cups, enough for two 1 1/2- to 2-pound steaks. Comments: Many marinades use wine, but while white wine is acceptable, I think that marinades containing red wine impart a sharp, bitter, and acrid flavor to grilled meat. Beer, on the other hand, is a delightful liquid for marinating, imparting an ever-so-slight malty flavor that goes particularly well with the smokiness of grilling.
