Instructions: Heat the oil in a pan and add the mustard seeds.
When they crackle add the cumin seeds and curry leaves. Stir once. Add the soaked cashew nuts and the powder spices. Stir fry until all the ingredients are blended. Season with salt and the lemon juice and mix well. Serve hot garnished with fresh coriander This recipe uses cashew nuts as the main ingredient and can be eaten as a vegetarian dish or an accompaniment to a meal.
